This home-made hummus dip will impress everyone at your party! Serve with lightly toasted pita bread.
1 x 400g tin chickpeas
3/4 jar tahini (either hulled or unhulled)
loads of lemon juice
little bit olive oil
pinch freshly ground black pepper
tablespoon (or two!) of minced garlic
1/2 teaspoon fresh chilli (optional)
Puree or fork-mash chickpeas.
Slowly add in tahini (this will make the mixture very thick - use salted water from chickpea tin or a bit of olive oil to make blending easier.
Add in some large squirts of lemon juice.
Add pepper and garlic (and chilli, too, if you like to spice things up).
Keep blending until all ingredients are well combined and your dip is a dollop-y consistency.
Serve with lightly toast wedges of pita bread.
