Mom's Fish Dish with Almonds

A delicious South African seafood recipe.
4 skinless kingklip fresh fillets
salt
flour
(1/2 teaspoon) French mustard
3 teaspoons fresh lemon juice (juice of 1 lemon)
125ml thick mayonnaise
125ml grated cheddar
melted margarine
1 egg white, stiffly beaten
1 packet of flaked almonds (flat)
Dust fish with mixture of salt and flour.
Put in ovenproof dish and brush top with butter mixed with lemon juice.
Grill until top turns white (a few minutes).
Turn over carefully.
Mix mayonnaise, cheese and mustard and fold in the egg white.
Spread over fish pieces and grill until golden (couple of seconds).
Put almonds in baking tray and grill. Let cool and sprinkle over fish.
Serve with new potatoes and salad.
