Fragrant Mussels

 

Exquisite seafood recipe - just wait till you try it...!

 

 

2kg black or green-lipped mussels

 

olive oil

 

2 cloves garlic, finely chopped

 

3 sticks lemongrass (outer leaves removed), finely sliced

 

2 fresh chillies

 

3 tablespoons ginger, finely chopped

 

2 handfuls fresh coriander, finely chopped

 

1 tablespoon sesame oil

 

5 spring onions

 

3 x limes, juiced

 

1 x 400ml tin of coconut cream (or milk)

 

1 tablespoon sesame oil

 

sea salt & freshly ground black pepper, to taste



Heat a very large pot.

 

Put all mussels in and shake the pot.

 

Add all ingredients except for coconut cream and lime juice.

 

Keep shaking pot until all the mussels have opened (there will always be a few that don't open - throw those ones away).

 

Add lime juice and coconut milk.

 

Bring to the boil.

 

Serve immediately with warm crusty bread or Belgian hot chips.
