Chilli Pork Noodles

A Japanese style recipe that is quick, easy, healthy and scrumptious.
500g udon noodles (wide Japanese noodles made from wheat flour, but you could substitute any dried flat wheat noodle)
1 tablespoon peanut oil
2 tablespoons finely chopped garlic chives
3 cloves garlic, crushed
3 small fresh red thai chillies, seeded, chopped finely
500g pork mince
¼ cup (60ml) light soy sauce
½ cup (125ml) chicken stock
1 cup (80g) bean sprouts
4 green onions, sliced thinly
Cook noodles in large saucepan of boiling water, uncovered, until just tender; drain.
Meanwhile, heat oil in wok or large frying pan; stir-fry chives, garlic and chilli until fragrant.
Add pork; stir-fry until cooked through.
Add sauce and stock; stir-fry until hot.
Serve pork mixture on noodles; top with sprouts and onion.
Serve noodles with Asian greens in oyster sauce.
