Warm Rocket Salad

 

This tasty salad recipe has to be served immediately after making.

 


2 medium red (Spanish) onions
8 rashers pancetta (preferrably) or bacon
4 sprigs thyme
1 x handful of pine nuts
4 x handfuls of rocket
olive oil
balsamic vinegar
salt
parmesan cheese

 

Peel onions and cut each into 8 wedges.  Fry rashers of pancetta in frying pan until crisp. Add some olive oil to the pan, then add thyme, onions, and pine nuts with a pinch of salt. Stir vigorously on a medium heat for 5 minutes (or until caramelised and sweet).

 

Next, combine all ingredients into a salad bowl with the rocket leaves. Drizzle generously with balsamic vinegar (which will make a dressing as it mixes with the olive oil). Serve with some shaved parmesan cheese over the top.  Perfecto!

Total cooking time:  20 mins (5 mins prep + 15 mins cooking).
