Dad's Famous Canadian Pancakes

 

My Dad has been making this Canadian pancake recipe for years.  Everyone he's made them for has always come back for more... and more... and more!  You'll not find a better pancake recipe anywhere on the Net.  :)

 

 

3 cups plain white flour

 

3 tablespoons white sugar

 

3 teaspoons baking powder

 

1+1/2 teaspoons baking soda

 

3/4 teaspoon salt

 

3+1/2 cups full cream milk

 

3 eggs

 

1/3 cup butter, melted



In bowl # 1:

 

Combine flour, sugar, baking soda, baking powder, salt.

 

Mix well.



In bowl # 2:

 

Combine milk, eggs, melted butter.

 

Beat.



Heat pan & grease lightly.

 

Pour wet mixture into dry mixture.

 

DO NOT OVER STIR!

 

Keep ingredient separate until last minute - if batter sits too long, your pancakes will be flat, not deliciously light and fluffy the way my Dad makes them.

 

Cook for a 2 - 3 minutes on each side, or until golden brown.

 

Serve immediately to your hungry family the Canadian way - with bacon & maple syrup!

 

Alternatively, you could serve the pancakes with lemon juice, cream & sugar.

 

Or berry jam/ jelly & icecream.

 

Or just with lashings of butter & honey.
