Kick-Start Diet Soup E-mail

A delicious recipe part of a kick-start diet recommended by some Australian health experts. This low calorie recipe is made with a variety of vegetables it is designed to keep you eating regularly and feeling full.

3 tomatoes

2 large cans crushed tomatoes

2 cans liquid stock (beef, chicken or vegetable)

2 cups water

1 packet of vegetable or French onion dry soup powder

1 bunch spring onions

1 bunch celery, including leaves

2 cups green beans

3 green capsicums

1kg carrots

2 stock cubes (chicken, beef or vegie)


Chop all the vegies into small pieces and put them in a big pot with the remaining ingredients.
Add salt and pepper (not too much salt).

Boil rapidly for two minutes and simmer until it's nice and tender.

If you want it thinner, add a bit more water.


Serves:  enough for one person for two days (on the 'kick-start diet')
