Diabetes Recipe - Creamy Spinach Penne |

Diabetic Creamy Spinach Penne Ingredients
12 ounces of washed spinach leaves with the stems removed.
12 ounces of uncooked penne pasta
1 medium minced clove of garlic
1 cup of low fat cottage cheese
1/4 cup of milk
1/4 cup grated parmesan cheese
1 tsp of dried basil leaves
1/2 tsp of salt (less if preferred)
1/4 tsp of black pepper, or to taste< br/>
12 ounces of roasted red peppers, from a jar is fine or make your own.
Diabetic Creamy Spinach Penne Directions
- Place the spinach into boiling water and cook for one minute.
- Remove spinach from water, saving boiling water to cook paste.
- Rinse the spinach with cold water and drain.
- Chop the spinach and set aside.
- Return the water to a boil and add the pasta.
- Cook pasta for 10 minutes or al dente and drain.
- In a blender mix the garlic, spinach, cottage cheese and milk. Blend until well mixed.
- Add Parmesan cheese and seasonings
- Toss with pasta and red peppers together, pour on sauce and serve.
