San Choy Bow (chicken) E-mail

This is a quick and easy recipe for yummy Chinese san choy bow.


500g chicken mince

8 iceberg lettuce leaves (the smaller, inner leaves are best)

1 teaspoon cornstarch

1 tablespoon stock or water

2 tablespoons vegetable oil

1 onion, finely diced

1 teaspoon crushed ginger

2 tablespoons soy sauce

½ cup chopped water chestnuts or bamboo shoots


Heat oil in a wok or fry pan, add onions and ginger and stir fry for a minute.

Add chicken mince and stir fry for a further 3 - 4 minutes or until chicken is cooked.

Combine starch and stock or water and pour into pan while stirring.

Simmer for 2 minutes.

Add water chestnuts and soy sauce and simmer for a further 1 minute.

Place mixture into the lettuce cups and serve

Roll up the filled lettuce cups and enjoy!


Hint:  For a more substantial meal, you can add soaked rice noodles after the chicken mince is cooked.  You could also sprinkle roasted peanuts onto the san choy bow before serving.
