For this Thai fish recipe, you may use any fillet or cutlet of fish of your choice...
2 fillets or cutlets of fish, cooked (steamed, grilled, microwaved or fried)
1/2 cup coconut milk
2 teaspoons rice flour
1/4 teaspoon salt
1 tablespoon lime or lemon juice
2 teaspoons fish sauce
red chilli, seeded and sliced (garnish)
spring onions, finely sliced (garnish)
coriander leaves (fresh) (garnish)
Make sure your fish fillets or cutlets are not over-done.
In a small pan over low heat, stir the coconut milk, rice flour and salt until it thickens
Sprinkle the fish with the lime juice and fish sauce, and spoon over the coconut milk mixture.
Garnish with chillies, spring onions and coriander.
